Memories, traditions, and a series of events in 2021 led to the inception of Cuz'n Vinny's Homemade Pasta Company, referring to the comedy "My cousin Vinny".
The Lehigh Valley is robust with unique foods and cultures. Some memories are passed down, while new traditions are started. We decided to give back to our community by supporting local small businesses and farms. We have supported many youth sports leagues and fundraising events through 2022.
We use #1 semolina, fresh farm eggs, spices, cheeses, and vegetables. Our vision was to use clean, non-gmo products without chemicals, and preservatives.
Early 2022, to keep up with demand and to improve the quality of pasta, Cuz'n Vinny upgraded to an extruder machine using brass dies that give the pasta ridges. The rougher surface allows the sauce to cling better to pasta. Nonstick dies and hand cut pasta have a smoother end product and holds its shape better. We opted for a product that will taste better because it is filled with tiny imperfections that capture the flavors of sauce or other ingredients.
We make fresh pasta which can be refrigerated up to 2 weeks. Otherwise, can be frozen. We also dry pasta using a dehydrator or air dry, depending on cut. Dry pasta will keep for 1-2 years in a cool dry area.
Through 2022 Cuz'n Vinny's Pasta participated in Vendor events. Recently we began at the Allentown Farmers Market. Cuz’n Vinny will be selling fresh pasta @ Easton Farmers Market starting in May. For upcoming vendor events see our event page.
Nonna Rose is Cuz'n Vinny's maternal grandmother. Born in 1887, she left Italy via Naples on the Ship SS Patria on September 20, 1899. She arrived at Ellis Island October 6, 1899 with her parents and many siblings. The family moved to and remained in the Phillipsburg, NJ and Easton, PA area.
Cuz'n Vinny fondly remembers his Italian heritage, such as lasagna with hard boiled eggs. He remembers Nonna making pappardelle Bolognese almost every Sunday and is still his personal favorite.
Josie's family came to the United States via Ellis Island in 1920. Cuz'n Vinny remembers red sauce with potatoes, meat and string beans. Lemon, Middle Eastern spices such as cinnamon, Italian and Greek cheeses, lentil, chickpea, fava beans, pine nuts, and pistachios were commonly used. Yogurt was used as a healthier alternative to cheese. Syrian rice with short pieces of pasta such as angel hair and is fried in butter.
